Ingredients for Healthy Christmas Rum Balls (GF)

·         1 ¼ Cups Pitted Soft Dates

·         1 ¼ Cups Raw Almonds

·         ½ Cup Nut Butter of Your Choice

·         ¼ Cup Cacoa Powder

·         2-3 tbsp rum

·         1-2 tbsp of Vanilla Extract

·         ½ Cup Sultanas

·         ½ tsp Salt

·         Desiccated Coconut to Rolls Rum Balls in

Method to make Healthy Christmas Rum Balls (GF)

1. Put sultanas & extra rum in a bowl, ensuring sultanas are just covered.

2. Cover & put aside in a cool place in the kitchen, but not the fridge.

3. Leave to soak at least overnight.

4. Ensure all dates are pitted before beginning.

5. Process/blitz almonds until resembling a grainy flour.

6. Add dates and process/blitz until smooth (high powered food processor works best).

7. Add remaining ingredients (except sultanas & coconut)

8. When smooth transfer to a bowl & mix soaked sultanas through mixture.

9. With wet hands, roll teaspoons of mixture into smalls balls then roll in coconut.

10. Refrigerate until form & enjoy.
