Coconut Balls

Servings: 20 Total Time: 20 minutes

Ingredients to make Coconut Balls

·         2 cups Desiccated coconut + optional additional for rolling 180 g

·         1 cup Puffed rice 90 g

·         3 tbsp Coconut oil 50 g

·         3 tbsp Honey

·         3 tbsp Coconut milk 45 ml

Method to making Coconut Balls

1.       Place  desiccated coconut & puffed rice in a food processor blitz until very fine.

2.       Add honey, coconut oil & coconut milk/cream &blitz until well combined, you may need an extra tbsp of coconut milk.

3.       Refrigerate the mix for approx. 15 minutes, this makes it easier to roll into balls.

4.       Roll into balls & roll in additional desiccated coconut if wish to.

5.       Refrigerate for 1-2 hours.

6.       Serve.
